You can chop everything by hand and it will be fairly rough and chunky - really nice but a bit of a pain in the arse.
Or you can use a blender, but you normally have to add more liquid (olive oil) than you'd like just to get the thing to work. Your call
Directions
Put half the olives and everything else in the blender and whizz it up
Add the rest of the olives and do it again. This should mean you get some texture, not just a mush
