This is the basis of pretty much every long-grain rice recipe. If you measure the rice and the water you don't need to drain it so it retains its nutrients and flavour

so here's the thing: You will need to choose what you use as a measure and more or less stick to it. I use a tumbler and I reckon that does two people. I'll call it a "measure" in the recipe

Directions

Measure a volume of rice and put it in a cold pan

Measure twice as much water and put it in the pan

Add a bit of salt if you are using it - i do

Bring to the boil and as soon as it boils, stir it and put it on the lowest possible heat with a lid on to trap the steam

Don't lift the lid, just ignore it for 20 minutes

Take the lid off and fluff it with a fork. If there is any liquid left leave it on the heat with the lid off to steam it off

Ingredients

  • 1 measure of basmati or long-grain rice
  • 2 measures of water
  • Salt
