You’ll mess up like I do, you’ll put onions on to sweat, do something else and burn them. You’ll put too much salt in or leave out a crucial stage or ingredient. Don’t panic, start again, you will almost never be able to compensate for a cock-up so carrying on just compounds the problem. Look at the next point and use that as a backup for when it all goes wrong.
